This is one of the most common questions we get. People walk in wanting Japanese food but aren't sure if they should go with hibachi or sushi. Let's make it simple.
What is Hibachi?
Hibachi is a style of Japanese cooking where meat, seafood, and vegetables are grilled on a flat iron surface at high heat. Think:
- Hibachi steak — tender, seasoned, cooked fast
- Hibachi chicken — juicy with teriyaki or garlic butter
- Hibachi shrimp — quick-seared and flavorful
- Fried rice — made right on the grill with butter and soy sauce
It's a hot, cooked meal. Filling, savory, and great for anyone who doesn't eat raw fish.
What is Sushi?
Sushi is a Japanese dish built around vinegared rice. It can include raw fish, cooked seafood, or just vegetables. Common styles:
- Maki — rice and fillings wrapped in seaweed (what most people think of as "sushi rolls")
- Nigiri — a slice of fish on top of a small mound of rice
- Sashimi — just the fish, no rice
- Hand rolls — cone-shaped seaweed wraps

Frequently Asked Questions
Is hibachi the same as teppanyaki? Technically, teppanyaki uses a flat griddle while hibachi uses an open grill. But in the US, most restaurants (including us) use the term hibachi for both styles.
Is all sushi raw? No! Many popular rolls are fully cooked. Our Texas Roll, Volcano Roll, and shrimp tempura rolls are all cooked.
What's a good starter sushi roll? California Roll. It's cooked crab, avocado, and cucumber. Zero raw fish.
